This are the cookies that I prepare most often. Very light and simple and just heavenly delicious. Also perfect to eat with milk, yogurt, ice cream or fruits. Kids love them too and that is always a good thing. Very quick and easy and make your home smells like…home !!!
- 260 g | 2 cups minus 1 tbsp plain flour
- 130 g | 4 1/2 oz unsalted butter, softened
- a pinch of salt (if you are not using unsalted butted, don’t add salt)
- 5 egg yolks
- 130 g | 4 1/2 oz caster sugar
- a few drops vanilla essence
1. Go here and follow steps 1 to 7. You need to do that because I have already explained how to make Pate Sucrée (Sweet Shortcrust Pastry) there. When you have finished all the steps, come back here for final instructions
2. Preheat the oven to 190°C | 375°F | Gas 5
3. Take the pastry out of the fridge. Loose the the cling film a little bit so there will be some room for the pastry to spread. Still having the cling film all around the pastry, roll it out very lightly until it is about 5 mm thick. discard the cling film.
4. Using a cookie cutter cut cookies, and arrange them over a baking sheet, lined with baking parchment. Gather the remaining pastry together again, flatten in a disc between two pieces of cling film again, put in the fridge and once the first batch of cookies is out of the oven repeat the process with the second / third batch until there is no pastry left.
5. Bake them uncovered in the middle of the preheated oven for 8 minutes. Ten put a piece of baking parchment loosely on top of them so they do not get burned, and bake for further 3-4 minutes. Take them out of the oven, leave on the baking sheet for 1-2 minutes and transfer on a wire rack to cool completely.
